Treat yourself to a batch of these chai-infused almond cookies, perfect for those moments when you need a little comfort and warmth. Infused with the aromatic spices of chai tea, these cookies aren't just delicious—they’re brimming with wellness benefits too! Chai spices like cinnamon, ginger, and cardamom are known to support digestion, reduce inflammation, and even help calm the mind. So, every bite not only satisfies your sweet tooth but also nurtures your well-being.

Ingredients:
  • 1/3 cup pure maple syrup
  • 1/3 cup Nurtur Chai tea
  • 1/2 cup roasted almond butter
  • 1 cup almond flour or almond meal
  • 1 cup buckwheat flour
  • 2 tsp ground cinnamon (a digestive hero and blood sugar balancer)
  • 1 tsp ground ginger (great for reducing inflammation and supporting immunity)
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cardamom (an ancient remedy for bloating and heartburn)
  • 1/4 tsp fine salt
Instructions:

Preheat and Prep: Get your oven warmed up to 175°C (350°F). Line a baking sheet with baking paper or a silicone mat—whichever you have on hand.

Mix it Up: In a large bowl, combine the maple syrup, chai tea and roasted almond butter. Stir until smooth. Add in the almond flour, buckwheat flour, cinnamon, ginger, nutmeg, cardamom, and salt. Mix until you have a stiff dough—don’t be shy to use your hands to bring it all together.

Shape with Love: Divide the dough into 12 balls, around 50g each. Place them on your baking sheet, spaced apart, and flatten each one into a cookie shape. Use the bottom of a glass or the palm of your hand—it’s all about that personal touch.
