Ingredients:
- Sticky Black Rice Porridge:
- 1/2 cup black rice
- 1/2 cup white rice
- 1 large pot brewed nursing tea
- 1 cinnamon quill
- 2-3 cups coconut milk
- 1/4 cup honey
- 1/4 cup sultanas
- Coconut yoghurt (for topping)
- Desiccated coconut (for topping)
- Fruit (for topping)
Instructions:
Soak the Black Rice:
Start by soaking 1/2 cup of black rice in water for up to 4 hours. This helps to soften the grains and reduce cooking time.
Prepare the Nursing Tea:
While the black rice is soaking, brew a large pot of our special nursing tea, which is designed to support lactation and provide essential nutrients.
Combine and Cook:
Rinse both the black and white rice thoroughly.
In a large saucepan, add the brewed nursing tea, the rinsed rice, and a cinnamon quill.
Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes.
Add Coconut Milk:
Once the rice begins to soften, add 2-3 cups of coconut milk.
Stir occasionally to prevent the rice from sticking to the bottom of the pan.
Sweeten and Flavour:
Add 1/4 cup of honey and 1/4 cup of sultanas to the porridge.
Continue to cook until the rice reaches your desired texture.
Serve and Enjoy:
Serve the porridge warm, topped with a dollop of coconut yoghurt and a sprinkle of desiccated coconut.
You can also add fresh fruit for extra flavour and nutrition.
Storage:
This recipe makes approximately 3 servings.
The porridge can be served cold and kept stored in the fridge for up to 3 days.
